I don’t mean to be corny but this kid is the cutest (okay, and I guess I do mean to be a little CORNy). And I am so proud that she loves vegetables this much. Corn is a great seasonal vegetable. It is a whole grain and is high in fiber.
There are so many ways to eat corn:
Raw - good quality corn is delicious raw as it’s packed full of flavor
Grilled - getting a nice char to your corn can bring out a unique flavor. Consider using a healthy Elote (or Mexican Grilled Corn) inspired recipe (use nutritional yeast garlic powder, paprika, lime, cilantro, etc. to season your corn).
Boiled - if you want a quick and effective way to showcase corn boiling does a great job of bringing out the flavor and it’s ready to eat in about five minutes
Frozen - shuck your corn and cut off the kernels to freeze fresh corn during the summer that you can enjoy year-round. This corn can be thawed for use in fresh meals or cooked to be used in soups.
Get your fresh corn before it’s gone for the season!
