Set your table with veggies! December seasonal vegetables

Many people think of holiday meals and think of meat. As a plant-based nutritionist I think of all the delicious veggies you can showcase on your table. A few of my favorite December seasonal vegetables are:

  • Cauliflower - rich in fiber, B vitamins and vitamin K, cauliflower can make a great side dish or be featured as a main dish. Cauliflower steaks make hearty main course, cauliflower wings make a spicy appetizer, and cauliflower rice can make a delicious side dish.

  • Celery - potassium, folate and vitamin A are a few of the nutrients in this crunchy veg. Celery can be used in soups, stir-frys, stuffings, salads and eaten as a snack.

  • Leeks - are a great veggie that, for those who don’t know, taste similar to an onion but are a bit more mile and a little sweet in comparison. Leeks are rich in calcium, vitamin C and vitamin E. I use leeks in soups, risottos, stir-frys, stuffings and salads.

  • Potatoes - are a starchy tuber with vitamin C, B vitamins, and potassium. Mashed potatoes have long been a staple at my family’s holiday table. I also enjoy a good vegan scalloped potato, potato soup and using potatoes to create other vegan dishes - such as a vegan cheese sauce!
