Fall is here! Get ready for some delicious seasonal produce!
Apples
Apples are great whether fresh picked and crips off a tree or baked into a crisp. And we all know the saying, "an apple a day, keeps the doctor away." So they must be healthy! They are. They are high in fiber, vitamin C, and various antioxidants.
Fennel
Fennel is often found in spice drawers because the seeds have a more potent flavor due to their essential oils. But you can also get the vegetable and use it in all kinds of dishes. Similar to our last produce highlight, fennel has fiber and vitamin C. It also has calcium (forget the old school 'got milk' commercials), potassium and maganese.
Squash
There are so many different types of squash. Pictured below is acorn. Acorn squash has vitamin C, sodium, potassium, vitamin B-6, and more nutrients! It can warm you up from the inside out on a chilly day and is delicious both as a sweet or savory meal.
I wish you plantiful platefuls full of seasonal vegetables!
